 5 cups kale, chopped
 ½ lb bacon, cut into pieces
 2 shallots
 3 garlic cloves, minced
 ½ tsp red pepper flakes

In a large cast iron skillet, add pieces of bacon and cook at medium high heat.

Add shallots once the bacon pieces are almost done and cook the shallots until they are translucent.

Add garlic cloves and red pepper flakes.

Add kale and drizzle garlic olive oil over the entire contents of the skillet. Toss to coat and cook for approximately 1 to 2 minutes. Remove from heat and drizzle Pomegranate Balsamic vinegar over the entire skillet.
