Sugar cookies have always been an easy go to favourite. They are simple to make and I don't know a soul who doesn't like these cookies. The twist on these is using butter olive oil in the recipe or try your favourite alternative like Persian Lime, orange or lemon. The olive oil makes them moist and tender with, of course, health benefits over regular butter as well.

 2 ¼ cups all purpose flour
 ½ tsp baking powder
 ½ tsp baking soda
 ½ tsp salt
 1 ¼ cups granulated sugar
  cup Olive the Best Butter Olive Oil (vegan, contains no butter)alternatives to use: Persian Lime, Orange, Lemon
 2 eggs
 ½ tsp vanilla extract

Preheat oven to 350ºF.

In a bowl, sift together flour, baking soda, baking powder, and salt. Set aside.

In a second large bowl, combine sugar and olive oil and mix with a spatula until it forms a grainy paste.

Add eggs and vanilla and stir until smooth. Fold in dry ingredients.until you have a soft, oily dough.

Fill a small dish with more granulated sugar. Scoop dough by the tablespoonful into balls and roll in sugar to coat.

Arrange on a nonstick or parchment-lined baking sheet, leaving some space between cookies for expansion during baking.

Bake for 9 to 11 minutes or until tops are puffed and crackly and edges just start to turn light golden brown.

Let cool for 5 minutes before transferring to a wire rack to cool completely.

For the best flavour, eat them right away --- but if you can also slowly nibble at them if you store them in an airtight container for up to 3 days.
