Preheat oven 425 degrees Fahrenheit (or 400 degrees convection)
Remove leaves from the cauliflower leaving the core.
Slice cauliflower from the centre of the cauliflower into 4x 1/2" thick steaks. The remaining florets can be used for another purpose.
Mix together the olive oil, lemon zest, lemon juice, garlic, honey, and red pepper flakes in a small bowl.
Brush the cauliflower on both sides with the mixture and season with a little sea salt.
Roast in the oven for 15-20 minutes until golden brown and cooked through by piercing with a fork. Remember to turn the steaks at the halfway mark to be sure both sides turn golden.
Remove from the oven and sprinkle with parsley and serve with lemon wedges.
